Easy & Delicious Overnight Bircher Recipe

With the crazy hot weather we’ve been having in Sydney the last thing you want to do in the morning is eat a hot breakfast. What’s a Verver to do? This Overnight Bircher recipe is the answer!

As fancy (and delicious!) as it looks it’s not difficult to make and will keep for 1-2 days in the fridge. Just keep in mind that as it is “overnight” you will do most of the prep work the night before you eat it.

Ingredients
150 g gluten-free oats
300 ml almond milk
1 scoop of vanilla protein powder
1 tsp vanilla extract
2 tsp cinnamon
50 g pumpkin seeds (optional)
1 green apple
1 tsp maple syrup (honey if preferred)
50 g natural yoghurt
Directions

1. The night before you want to eat the Bircher, soak the oats with the milk and vanilla extract in a bowl. Stir well, and put the bowl in the fridge overnight.

2. In the morning grab the oats from the fridge, add the protein powder, grate the apple on top, stir in the maple syrup, spoon on the yogurt and sprinkle the cinnamon and seeds over the top.

There you have it! This quick and easy breakfast is a great way to start your day and is packed with goodness to nourish your body. 

PS. This is just a base recipe. Feel free to substitute/add other nuts, seeds, fresh berries, or seasonal fruit to vary the flavours. The options are endless, so have fun!
